Up for an ETON MESS?!

Eton Mess?!?! I never heard of it until a few months ago! But its meant to be associated with Eton College students, consisting of a mixture of strawberries, pieces of meringue and cream and history has it as traditionally being served at Eton College's annual prize-giving celebration picnic on the 4th June.

Well! I'm not an Eton College student, I'm a BCU student and proud of it!...But alas I'm also hungry and would quite like to try a new fun recipe...what could be more fun than a recipe with the word ''Mess'' in?! hehe

The Yummies

4 medium-sized meringues (freshly made or bought)
280 ml double cream
50g icing sugar
10ml (1 tbsp) vanilla essence
150 ml Greek yoghurt
500 g strawberries

How to?
  1. Rinse the strawberries, remove the tops and cut into halves.

  2. Break the meringues into pieces (not too small) and place into a bowl.

  3. Put the double cream, vanilla essence and icing sugar into a bowl and whip until reasonably stiff.

  4. Combine the cream, yoghurt, strawberries and meringue, being careful not to mash the meringue into pieces that are too small.

  5. Serve in bowls or pile onto a small serving dish like a big Mess!-surly only a student could have created this recipe! :)

Hopefully mine will look a little more like this picture than the first!
